YAAAS. I eat these. #noragrets because 80/20 with my simple eating plan! YEAH BUDDY. Live your life and still get results?! YUP. So since I can’t do the typical pancake because gluten nightmare and for 2 it makes me feel like a big sleepy turd all day since most of the ingredients in pancake mixes are processed sugars and chemical garbage when we saw this recipe we HAD to try it! GAINS and gluten free?! YUP. Husband thinks they are BOMB too. I love finding healthy alternative recipes we can BOTH enjoy.
BOMB Gluten Free Coconut Pancakes
Servings: roughly about 2-3
*I had 4x 3.5″ cakes (I had to stop myself because they were so good LOL)
*husband had about 5 and they ranged from 3.5″ to 4″ rounds
Ingredients:
-6 large organic eggs (36g of protein)
-1/4 cup organic coconut oil
-3/4 cup organic almond milk
-1 tsp vanilla extract
-3 tbsp organic pure maple syrup
(whisk together)
..then add
-1/2 cup coconut flour
-1/4 cup shredded coconut
-2 tbsp flax meal (I blended my flaxseed)
-1/2 tsp baking powder
-1/4 tsp salt (I used sea salt)
(whisk together)
1. Turn stove on medium heat with a little bit of coconut oil on pan.
2. Pour desired size pancake onto pan once heated and cook about 1 min per side.
3. INHALE 😉
*Add maple + coconut flakes on top if desired, we did #noragrets (nom) – this last time, I added cinnamon on top too and it was GREAT.
Side note: The mixture can be a little runny and that’s totally normal. (it happened to use 3x’s so far) If you heat the pan to medium heat and pour it slowly you can usually fit 2 (roughly) 3.5-4″ cakes at once. If they touch or run together NO BIG DEAL, just separate them once they cook a little more thoroughly. The picture on the right is from the first time we made them and I made HUGE ones. I realized smaller was better. Mind trick to feel like you’re getting more and don’t over eat.
Also, the coconut oil was weird to whisk – I heated it up to liquify in the microwave then mixed it in – but since it was with colder ingredients it tried to solidify again and got chunky. It still worked out in the end.
